Hello All! 

There is much talk of “innovation” within the food and other industries; with many university hosted and regionally funded initiatives aimed at stimulating business innovation. 

Personally, I am not sure whether you can stimulate innovation via such forums – I might even go so far to say that true innovators are born, not created – a bit like sales people. Industry colleagues have often commented on how innovative we have been at Ulrick & Short, and I would agree to some extent in cases where we have not followed the accepted theory and practice – for example when we decided to “throw away” starch technology textbooks and explore the properties of starches ourselves. 

However, in most cases the closest we have come to what is mistakenly described as innovation is by identifying a commercial opportunity and focusing our resources on achieving a speedy solution. Having said all this we have recently created an innovation group within the company in order to try to disprove the above somewhat jaundiced view.

Let’s hope it results in at least one truly novel and revolutionary idea. Or is it really just that innovation is a simple mix of hard work good luck.

ULRICK & SHORT FORMS INNOVATION COALITION FOR FOOD INDUSTRY
         

Leading UK manufacturer and supplier of functional clean label ingredients, Ulrick & Short Ltd, has announced plans to launch its own innovation think tank to create, develop and bring new products to market.  

It is hoped this specialist approach to product innovation, which will involve outside partners, will allow Ulrick & Short to accelerate new products to market through delving into new ingredients that will complement the company’s existing range of clean label starches, fat replacers, thickeners and bakery glazes.  

The new group will also be exploring food sectors where Ulrick & Short do not yet have a presence and identifying and researching ways of breaking into these potential markets.  

This new approach will enable Ulrick & Short to form strong new product development strategies and have technical and industry back up for its ideas.  

Ulrick & Short’s director Adrian Short commented: “The company’s success has been built on superior innovation and it has already established successful joint technology ventures around the world. As the business continues to rapidly g row, it is imperative that Ulrick & Short continues to strengthen its innovation activity, whilst allowing us to maintain a clear focus on research and development for current customer specific projects. 

 “Combining process functionality with a health twist is Ulrick & Short’s next goal and we already have new products in the pipeline. Our innovation think tank involving leading academia and our great manufacturing partners will play an integral role in helping us accelerate new product development.” 

The forward thinking company will be unveiling its functional healthy products in the autumn.

Recipe of the month - a flavourful marinade for chicken, pork, and beef

 

Ingredients

 

1/3 cup orange marmalade

 

3 green onions, finely chopped

 

1/4 cup white wine

 

1 tablespoon olive oil

 

1 tablespoon cider vinegar

 1 teaspoon Worcestershire sauce

1/2 teaspoon soy sauce

 

Method

Place all ingredients in a medium saucepan. Simmer on low heat until marmalade has thinned and all ingredients are combined. Allow to cool completely before using as a marinade.

Coat chosen meat with the marinade and cook through thoroughly on bbq or grill.

Remember to let the marinade cool considerably before using it on raw meat.
